Butter Mint Recipe

Oh my gosh!!!!  We have a strange obsession with butter mints, there are some restaurants who would be better served to charge us for the mints and give us our meals for free.  I have always fretted over how unhealthy they are.  I now have a solution.
I made my own butter mints today using Essential Oils. 
2 sticks of unsalted butter (not margarine)
2 lbs of confectionary sugar
8-10 drops of high quality, safe to ingest Peppermint Essential Oil (start with 8 and test to see if you want more peppermint)
2 Tbsp of Water
Put all ingredients in stand mixer or food processor.  Mix until it makes a dough (think thick like pizza or cookie dough).  If it is not coming together add more water 1 tsp at a time. 
Separate into about 8 sections.  Take each section and roll out in a round “spaghetti” with a diameter about the size of a dime.  Slice up and let dry.  I did this last part on my pie/pastry mat.
